Behind the Pass: One Night at a 200-Seat Gala
From the first canapé at six to the last plate at midnight — a diary of service from inside the kitchen.

Six in the evening. Two hundred seats, forty staff, one kitchen the size of a generous living room. This is what service looks like from the inside.
18:00 — Canapés
The first trays leave the pass ninety seconds apart. The room sounds like weather — you learn to read it. A good canapé hour hums.
20:15 — The main
Two hundred plates in fourteen minutes. Every plate crosses three sets of hands, and every set of hands knows exactly which garnish is theirs.
23:40 — The last plate
Dessert goes out to a room that is dancing. The kitchen is quiet for the first time in six hours. Somebody opens the good coffee. We start planning the next one.
